Herbed Roast Salmon with Citrus Mustard Sauce

Your regular weekday salmon gets an herbaceous makeover the whole family will adore. Honey and dijon hold the herb crust in place and the kids will love assisting in ‘painting’ on this delicious combo. The whole recipe comes together in less than 20 minutes, so you’ll have dinner on the table in no time. Pair the salmon with some roast broccoli and a side of simply prepared brown rice and use the sauce to flavor pack the whole meal. 

Herbed Roast Salmon with Citrus Mustard Sauce

Ingredients

Salmon:

1-1.5 lbs Atlantic salmon 
1 tsp kosher salt 
2 tbsp Dijon mustard 
½ tsp honey 
¼ cup of any combination of parsley, chives, mint and/or dill, chopped 

Sauce:  

1 tbsp Dijon mustard
2 oranges, juiced 
1 tbsp shallot, minced
1 tbsp parsley, chopped 
1 tbsp dill, chopped 
1 tbsp champagne vinegar, or red wine vinegar
1 tsp kosher salt 
3 tbsp olive oil

Instructions

Prepare the salmon:

  • Heat the oven to 415°F. Place salmon on a parchment lined baking sheet. Pat salmon dry and season with salt. Spread the Dijon mustard in an even layer over the salmon using a basting brush or the back of a spoon. Drizzle the honey over the salmon and use the same ‘painting’ method to evenly disperse.
  • Pack the chopped herbs onto the salmon, really sticking it on there to form an even layer of ‘crust’.
  • Bake for 12-14 minutes, depending on desired doneness.

Prepare the sauce:

  • Combine and whisk the Dijon mustard, orange juice, shallot, parsley, dill, champagne vinegar, and salt. Once combined, slowly stream in the olive oil while continuing to whisk to emulsify.
