The Culinistas’ Postnatal Chocolate Pudding

At The Culinistas, it is our mission to make sure every mom is being looked after and getting the nutritional support she needs, whether that be promoting milk production or reclaiming your body after sharing it for so many months. We’ve curated menus that will fortify you, so caring for your baby doesn’t conflict with caring for yourself.

If you are breastfeeding, our postnatal menus are packed with lean proteins and iron to stimulate baby brain development, as well as vitamins and antioxidants that will keep your immune system strong and your hormones balanced. We include healthy, whole grain carbs that will counterbalance the calories you are expending as you feed your baby, as well as foods rich with tryptophan so that when you do have those precious moments of relaxation, you’ll be able to rest easily.

For those working on self care and reclamation, our menus focus on light proteins, nutrient rich leafy greens, healthy snacks, and fruit salads to satiate a sweet tooth.

The Culinistas’ Postnatal Chocolate Pudding

Our pudding gets its creamy texture from puréed, folate rich avocado, which produces and maintains new cells. The fats in avocado help lower the risk of heart disease, improve cholesterol levels, and contain several anti-inflammatory benefits for the body, particularly for the cardiovascular system. Our pudding is made with agave nectar, an alternative to processed sugar that is great for keeping blood sugar levels low. A hit of cocoa powder reduces inflammation and improves blood sugar levels, cholesterol, and blood flow.

  • Preheat the oven to 350ºF.
  • In a medium bowl, mix pecans, ¼ cup agave, 2 TB olive oil, urfa, and salt. Transfer to a parchment-lined baking sheet; bake until golden brown, 10-12 mins.
  • While still hot, transfer the pecans to a mixing bowl and toss with ½ cup cocoa powder, until each pecan is fully coated. Let cool completely.
  • In a food processor, blend avocado, remaining 1 cup cocoa powder, remaining ¾ cup agave, and remaining 2 TB oil. Adjust consistency with 2-3 TB water if the pudding is too thick. Season with salt.
  • Serve in bowls and garnish with cocoa pecans.

1 cup pecans
1 cup agave nectar, divided
¼ cup, divided
½ tsp urfa
1½ cups unsweetened cocoa powder, divided
2 ripe avocados
Salt, to taste

Chef Tips

Use only ripe avocados to make the pudding. If the only avocados available are rock hard, store with a banana in a brown paper bag in a dark and dry place. The ethylene gas released from the banana will speed up the avocado ripening process to 1-2 days. (If you have vanilla extract, add a little to the pudding. Or, if you like spicy, add a little cayenne.)
